Fall is my favorite season. And October is the most fun I have with a board all year, and this class is where that shows.
The centerpiece is a prosciutto hand. It sounds strange written down, and then you make one and understand immediately why it stops people in their tracks. I will walk you through the folding and shaping start to finish, slowly, with everyone working at their own pace. Nobody gets left behind on this one.
From there we build the board around it. You will learn how a dark palette actually works, because a moody board is not just a regular board with black crackers thrown on. We will intentionally use deep reds, blacks, and purples: blackberries and black grapes, pomegranate, dark chocolate, etc.
You will also learn the fundamentals that carry over to every board you ever build. How to fold a salami rose. How to cut each style of cheese so it looks as good as it tastes. And how to garnish so the whole thing reads as intentional rather than decorated.
What's included
All ingredients, provided and prepped. A take-away board and all tools. Step by step instruction from me the whole way through. Recipe and technique cards to take home so you can do this again on your own. And your finished board is yours to keep, which means you leave with dinner or with something to bring to a party that night.
Bring your favorite bottle. Class is held in the Rose & Brie commercial kitchen at 2171 Christian Rd, Lexington KY. Free parking on site. Class runs about two hours, and the group stays small so everyone gets real hands on time and I can help each of you individually.
