We are building charcuterie Christmas trees, and they are as good as they sound.
This class runs a little higher than the others for good reason. A tree takes a larger specialized board, a lot more rosemary, and special holiday elements you will not see in the other classes. It is the biggest thing you will make with me, and you will absolutely love this for your holiday parties!
Rosemary makes the branches, and everything else tucks in around it: rounds of cheese, salami roses standing in as ornaments, a star of brie, cranberries, olives, dried orange, chocolate, whatever catches the light. I will show you how to build the shape so it holds together and reads clearly as a tree from across the room, which comes down to a few structural decisions in the first five minutes.
Alongside the tree you will learn the core techniques: salami roses, prosciutto styling with height and movement, cheese cutting for each style, and color theory (particularly red and green!)

All ingredients, provided and prepped. A larger board and all tools. Step by step instruction from me the whole way through. Recipe and technique cards to take home. And your finished tree is yours to keep, which makes this a good one to book the week you are hosting.
Bring your favorite bottle. Class is held in the Rose & Brie commercial kitchen at 2171 Christian Rd, Lexington KY. Free parking on site. Class runs about two hours in a small group, so everyone gets hands on time and individual help.
